  • 4 artichokes
  • 3 cups day-old bread crumbs
  • 2 tablespoons snipped parsley
  • 1 clove minced garlic
  • 8 anchovy fillets
  • 1 cup olive oil
  • 2 cups of water

 

 

 

Instructions:

 

 

  1. Cut stems from artichokes and pull off the hard outer leaves.

 

  1. With your palm, press down on the top of each artichoke. Then spread it apart to form a well in the center.

 

  1. Combine bread crumbs, garlic and anchovy fillets in a bowl.

 

  1. Spoon the stuffing into the center of each artichoke well.

 

  1. In a pan, add the water and olive oil.

 

  1. Add artichokes and simmer with the pan covered for 20 minutes.

 

  1. Remove the cover and simmer for 35 minutes.

 

  1. Remove the artichokes from the water and oil mixture and serve.

 

 

 

Sweet Potato Volcanoes

 

 

Sweet potato volcanoes are a fun twist on a classic dish that everyone will love. You will need:

 

 

 

  • 29-ounce can of syrup packed sweet potatoes
  • 1/2 teaspoon cinnamon
  • 9 miniature marshmallows
  • 3 tablespoons butter
  • 1/4 teaspoon salt
  • 1 egg

 

 

 

Instructions:

 

  1. Preheat oven to 425 degrees.

 

  1. Beat the egg in a small bowl.

 

  1. Melt the butter in the microwave.

 

  1. Except marshmallows, mash all the other ingredients together.

 

  1. Place mixture into a pastry bag with a piping tip.

 

  1. Pipe mixture onto a cookie sheet forming 2.5-inch circles.

 

  1. Bake for 15 minutes.

 

  1. Remove from oven and add marshmallows in it.

 

  1. Bake for 4 minutes.

 

  1. Let it cool slightly and lift onto a serving plate.

 

 

Cottage Cheese Dinner Rolls

Skip the store-bought bread and impress your guests with this easy dinner roll recipe. You will need:

 

 

  • 5 teaspoons active dry yeast
  • 1/2 cup warm water
  • 2 cups small curd, full-fat cottage cheese
  • 2 eggs
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/2 teaspoon baking soda
  • 5 cups all-purpose flour

 

 

 

Instructions:

 

  1. Dissolve the yeast in warm water.

 

  1. Heat the cottage cheese in a pan on the stovetop until it reaches 115 degrees.

 

  1. Combine 2 cups of flour and all other ingredients in a mixer.

 

  1. Beat until it becomes smooth.

 

  1. Add the remaining flour slowly until it becomes sticky.

 

  1. Remove the mixture from the bowl and knead for 7 minutes.

 

  1. Form a ball and place in a greased bowl, turning once to grease the top, cover.

 

  1. Let it rise for an hour or until it doubles in size in a warm place. Punch it down and make it into small balls.

 

  1. Put them on a greased baking sheet and let them rest until they are doubled in size or for about 30 minutes.

 

  1. Preheat the oven to 350 degrees and bake for 10 to 12 minutes or until slightly brown.
